Ingredients
  

Dough

  • 1.25 cups whole milk warmed to about 110 degrees F
  • 2.25 teaspoon active dry yeast
  • 1 teaspoon granulated white sugar to bloom the yeast
  • 4.75 cups all-purpose flour spooned and leveled
  • 1.5 teaspoon ground cinnamon
  • 0.75 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon ground cardamom
  • 0.125 teaspoon ground cloves
  • 1.5 teaspoon salt
  • 2 tablespoon granulated white sugar
  • 2 eggs whisked
  • 1 tablespoon vanilla extract
  • 0.5 cups unsalted butter very softened

Chai Caramel Sauce

  • 0.33 cups heavy cream
  • 0.5 cups unsalted butter very softened
  • 1 cups light brown sugar packed
  • 1.5 teaspoon ground cinnamon
  • 0.75 teaspoon ground ginger
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground nutmeg
  • 0.75 teaspoon ground cardamom
  • 0.125 teaspoon ground cloves
  • 0.33 cups honey
  • 1.5 teaspoon vanilla extract
  • 0.25 teaspoon salt

Chai Filling

  • 0.5 cups unsalted butter very softened
  • 1 cups light brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1.5 teaspoon ground ginger
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.25 cups heavy cream for pouring in between the rolls

Chai Cream Cheese Frosting

  • 6 tablespoon unsalted butter very softened
  • 6 oz cream cheese softened
  • 0.75 cups powdered sugar
  • 1.5 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon ground allspice
  • 0.125 teaspoon ground nutmeg
  • 0.25 teaspoon ground cardamom
  • pinch cloves

Instructions
 

Dough

  • Bloom the yeast by mixing active dry yeast, sugar, and warm milk together and let sit for 10 minutes until foamy on top.
  • In a large bowl of a stand mixer with a whisk attachment, mix flour, chai spices, salt and sugar together.
  • Add the whisked eggs, vanilla and softened butter to the dry ingredients and mix.
  • Add in the yeast mixture and mix until everything is blended. Switch to a dough hook and knead on medium speed for 7-10 minutes until the dough pulls away from the edges of the bowl.
  • Form the dough into a ball, place in a greased bowl, cover and let rise until doubled in size.

Chai Caramel Sauce

  • Heat heavy cream over low heat until steaming, then add the teabags and steep for 10 minutes.
  • Mix butter, brown sugar, chai spices, honey, vanilla, and salt in a medium bowl, then mix in the chai-heavy cream mixture.
  • Grease a 9x13 inch casserole dish and spread the mixture over the bottom.

  • Mix butter, brown sugar, chai spices, and salt together in a bowl.

Assembling & Baking the Chai Rolls

  • Roll out dough to about an 18 x 12 inch rectangle, about ¼ inch thick.
  • Spoon the chai brown sugar filling over the dough and spread it evenly.
  • Roll up tightly into a log shape starting from the end closest to you, cut into 12 rolls.
  • Place rolls in the prepared casserole dish with the chai caramel sauce mixture, pour heavy cream in between rolls, cover and let proof until doubled in size.
  • Preheat the oven to 350 degrees F about 15 minutes before baking.
  • Bake rolls for 29-32 minutes until golden brown.

Chai Cream Cheese Frosting

  • Mix softened butter and cream cheese until combined and fluffy.
  • Add powdered sugar, vanilla extract, and chai spices, mix until fluffy.

Notes

These rolls are best served warm and can be stored in an airtight container for a few days. Enjoy with a cup of chai tea!
