Ingredients
  

  • 3 cups freshly shredded cheddar cheese
  • 12 thinly sliced onion circles
  • 24 candied jalapeños (or pickled jalapeño rings) drained and patted dry
  • ¼ teaspoon creole seasoning (or seasoning of your choice)

Instructions
 

  • Coat a Wilton muffin top pan with nonstick spray.
  • Add freshly shredded cheddar cheese to each circle (about ¼ cup).
  • Next, add an onion circle on top of the cheese and two pickled jalapeños on top of the onion. Sprinkle with a bit of creole seasoning.
  • Bake at 400F for about 12-15 minutes or until the edges start to brown. Watch them carefully, as they can go from done to burnt quickly.
  • Remove from the oven and let cool for a few minutes. Then run a dull knife around the edges of the cheddar onion chips to take them out.
  • Transfer to paper towel-lined plates to drain for 10 minutes and crisp up.
  • Serve with marinara sauce for dipping if desired and enjoy!

Notes

You can also bake these on parchment paper. Mound portions of the cheese mixture on the baking sheets, with 2 inches between. Flatten them slightly with the back of the spoon. Proceed with the written recipe.
