Ingredients
  

  • ½ cup butter sliced into pieces
  • 2 cups granulated sugar
  • ½ cup milk preferably whole milk
  • ¼ cup unsweetened cocoa powder
  • ½ cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cups quick-cooking oats

Instructions
 

  • Gather all ingredients and measure everything out. Line two large baking sheets with parchment paper and set aside.
  • Combine the butter, sugar, milk, and cocoa powder in a large saucepan over medium heat. Stir often until the butter melts and combine well. Bring to a boil for 60 seconds, stirring occasionally.
  • Remove from heat and stir in peanut butter and vanilla extract until fully combined. Add oats and mix until all oats are coated.
  • Drop spoonfuls of the mixture onto the prepared baking sheets and allow to cool for 20 to 30 minutes. Serve and enjoy!

Notes

Cookies may be stored in an airtight container at room temperature for up to one week. Freeze cooled cookies in a freezer bag/container for up to 3 months. Thaw before serving. Old-fashioned rolled oats can be used but may result in chewier cookies.
