Ingredients
  

For the dough

  • ½ cup whole milk lightly warmed
  • 2 tablespoons granulated sugar
  • 1 envelope active dry yeast or instant yeast (2 ¼ teaspoons)
  • 4 tablespoons unsalted butter melted and lightly cooled
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 cups all purpose flour
  • 1 teaspoon kosher salt

For the filling

  • 4 heads garlic tops cut off to expose the individual cloves
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter softened to room temperature
  • ¼ cup chopped parsley
  • ½ teaspoon kosher salt and freshly ground black pepper
  • 2 cups shredded mozzarella cheese preferably thick-cut

For the topping

  • 2 tablespoons butter melted
  • 1 tablespoon chopped parsley
  • 1 tablespoon freshly grated parmesan cheese plus more for garnish
  • 1-2 teaspoons minced garlic

Instructions
 

For the dough

  • Warm up the milk to around 110°F and combine with sugar and yeast; let sit for 7-10 minutes.
  • Add melted butter, egg, egg yolk, flour, and salt; knead until smooth.
  • Shape into a ball, place in greased bowl, cover, and let rise until doubled, about 1-2 hours.
  • Roast garlic by drizzling with olive oil, tenting with foil, and baking at 400°F for 30-40 minutes.
  • Punch down risen dough and roll out into a rectangle; prepare filling.

For the filling

  • Process roasted garlic into a paste; spread softened butter on dough, then garlic paste, parsley, and cheese.
  • Roll the dough into a log, seal the seam, and cut into 9 pieces.
  • Place in a lined baking dish, cover, and let rise again for 1-2 hours until puffy.
  • Preheat oven to 350°F, remove cover, and bake until golden brown, about 30-35 minutes.
  • Combine topping ingredients, brush on rolls, garnish with parmesan, serve warm.

Notes

For overnight rolls, refrigerate filled rolls for up to 10 hours and let come to room temperature before baking. Store in an airtight container for 3-4 days or freeze for 1 month.
