Ingredients
  

for the cookies

  • ¾ cup creamy peanut butter recommended Jiff or Skippy
  • ¼ cup unsalted butter at room temperature
  • 1 cup packed light brown sugar
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

for the peanut butter filling

  • ½ cup creamy peanut butter
  • cup powdered sugar
  • 3 - 4 tablespoons heavy cream
  • ½ teaspoon vanilla extract

Instructions
 

Making the Cookies

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a stand mixer fitted with the paddle attachment, beat together the peanut butter, butter, and brown sugar until combined. Increase speed to medium-high and beat until light and fluffy, about 1 minute.
  • Add in the egg and vanilla. Beat to combine.
  • Add the flour, cornstarch, baking soda, and salt and beat on low speed until just combined.
  • Use a cookie scoop to portion out equal amounts of dough. Shape the dough balls into flat oval discs and place them on prepared baking sheets, spacing them 2 inches apart.
  • Use a fork to make crosshatches on each circular end. Bake for 9 to 10 minutes until cookies are puffed and set but still soft in the middle. Allow to cool completely.

Making the Filling and Assembly

  • In the stand mixer, combine peanut butter, powdered sugar, 3 tablespoons of heavy cream, and vanilla. Beat on low speed until smooth. If too thick, add the last tablespoon of cream.
  • Match cooled cookies into pairs, pipe filling onto the bottom of one half and sandwich with the other half.
  • Enjoy!

Notes

For crunchier cookies, bake for 2 to 3 more minutes until the edges are golden brown.
