Ingredients
  

  • 1.5 cups crushed buttery crackers such as Ritz
  • cup evaporated milk
  • 1.5 tablespoon Worcestershire sauce
  • 2 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 2 cloves garlic grated on a Microplane
  • 1 medium sweet onion (7 oz.), grated
  • 2 lb 85% lean ground beef
  • cup ketchup
  • 3 tablespoon pepper jelly
  • cooking spray for baking dish

Preparation

  • Preheat the oven to 350°F. Line a sheet pan with foil; coat foil with cooking spray.
  • In a large bowl, stir together cracker crumbs, evaporated milk, Worcestershire sauce, salt, pepper, eggs, garlic, and grated onion. Add the ground beef and mix well with your hands to combine. Shape the mixture into a 9 x 4-inch loaf and place on the prepared pan.
  • Bake the meatloaf at 350°F for 35 minutes. Meanwhile, combine ketchup and pepper jelly in a medium bowl.
  • Remove meatloaf from oven, brush with the ketchup mixture, and return to oven. Bake until a thermometer inserted in the center registers 165°F, about 30 minutes. Let stand for 5 minutes before slicing into 12 pieces.
